Description

Ingredients

6-8 Russet potatoes, diced

2 cups shredded cheddar cheese

1 cup mayonnaise (use full-fat)

8 slices bacon, cooked until crispy and crumbled

3 cloves garlic, minced

1 medium onion, chopped


Instructions

Preheat the oven to 325°F (163°C) and lightly grease a 9×13-inch baking pan.

In the baking pan, combine the diced potatoes, cheddar cheese, crumbled bacon, minced garlic, and chopped onion.

Add the mayonnaise and mix thoroughly until all ingredients are evenly coated.

Bake uncovered for 1.5 hours, or until potatoes are fork-tender and the top is golden and bubbly.

Let the dish rest for 5-10 minutes before serving hot.

Notes

Try adding jalapeños or red pepper flakes for a spicy version.

Swap cheddar for smoked gouda or pepper jack for a different flavor.
