HEALTHY TACO STUFFED TOMATOES

Taco stuffed tomatoes is a healthy Mexican inspired dish. It is easy to make and very time-efficient. It can take less than 30 minutes to make. Also, it is a great meal to have with your family members.

The filling of these tomatoes is well-seasoned and flavorful. The combination between the filling and the juicy tomatoes is quite exquisite in your mouth. It is best to serve it after the tomatoes are cooked immediately; while the tomatoes are firm and the cheese is gooey. You can adapt it the way you want. Ingredients 

4 Large tomatoes

1 lb. Ground beef

1 Packet taco seasoning

4 C. Spinach raw

½ C. Corn

½ C. shredded Cheddar cheese

Parsley for garnish

 


Method:

Preheat the oven to 375 degrees.

Add the ground beef and onions to a skillet over medium-high heat on the stove.

Saute until the onions have softened and the beef is completely browned. Drain any remaining grease.

Mix in the taco seasoning, corn, and spinach until the spinach has completely melted.

Slice the top of the tomatoes off, remove the center of the tomato and spoon out the inside.

Fill the tomatoes with the taco mixture and sprinkle with the cheese on top.

Bake for 15 minutes.

Garnish with chopped parsley and serve.


Serve:

Serve immediately with sour cream, cilantro, and your favorite taco toppings for a delicious meal.

Tip:


It is not recommended to freeze the tomatoes as they contain a lot of water and might become unappetizing.

Alternatives:

For a vegetarian meal, you can remove ground beef.

Instead of tomatoes, you can use bell pepper.

Instead of taco seasoning, use a homemade seasoning blend or season as you wish.

You can swap kale for spinach

You can add additional toppings, such as sliced jalapeños, diced avocado, or a dollop of sour cream.
