Chocolate Skillet Cake with Ice Cream



Ingredients:


° 1 c flour

° 1/2 t baking soda

° 1 cup sugar

° pinch of salt

° 1/4 c (1/2 stick) butter

° 1/4 c vegetable oil

° 2 t cocoa powder

° 1/2 c water

° 1/4 cup buttermilk

° 1 egg

° 1/2 teaspoon of vanilla

+Icing:

° 1/4 cup (1/2 stick) butter

° 2 t cocoa

 ° 3-4 t milk (as needed for consistency)

° 1/2 c pecans

° 2 c powdered sugar

° 1/2 t of vanilla

° Cream ice (to serve)

° whipped cream (to serve)


Methods:


Preheat oven 350 degrees F. In  bowl, whisk flour, baking soda, sugar & salt together and set apart.

In 10 inch cast iron skillet, bring butter, vegetable oil, cocoa powder also water to a boil.

Removing from the heat and blending in dry ingredients well. Mixing buttermilk, egg & vanilla. Baking cake in the pan at 350 degrees F for 15 to 20 minutes 

When cake is starting to cool, preparing frosting. In  saucepan, bring butter, cocoa also milk to a boil. Removing them from the heat & adding icing sugar, walnuts & vanilla. Stir to combine.

Pour on warm cake, spreading with spatula and serving with vanilla bean ice cream, caramel sauce and whip cream
